Bison Tater Tot Casserole

Recipe from: Chef Destiny Calahasen (Tansi AHS)

Cook Time: 50-60 minutes

Makes: One 9x13-inch casserole

Ingredients:

  • 1 lb ground bison

  • 1 (16 oz) bag frozen mixed veggies

  • 1 can cream of mushroom soup

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 (32 oz) bag tater tots

  • 2 cups shredded cheese

  • salt (to taste)

  • pepper (to taste)

  • 1 tbsp olive oil


Instructions:

  1. Preheat your oven to 350°F.

  2. Heat a large skillet and add about 1 tbsp of olive oil.

  3. Once the oil is hot, add the bison meat. Add salt and pepper to taste and cook until browned.

  4. Add powdered onion and garlic, and cook for 30 seconds until fragrant.

  5. Turn off the heat and mix in cream of mushroom soup and frozen vegetables until well combined.

  6. Transfer the mixture into a greased 9x13 pan and cover with 1 cup cheese.

  7. Cover with a layer of tater tots and the remaining cup of cheese.

  8. Bake at 350°F for 40 minutes or until the tater tots are browned and the casserole is bubbly.
